Cauliflower Masal Dosa/Gobi Masal Dosa



Being not a very good fan of cauliflower and after hearing how much pesticides they're putting of the cultivation,stopped having completely.But still when ever i see any of the cauliflower recipes i feel like trying and when my aunt told me about this masal dosa and guaranteed about the taste then i started to think Free Thinking Smileys about using cauliflower.When is was talking to my mom then she was giving me confidence that i do the proper cleaning like soaking in warm and then prepare nothing will be harmful.After her words i started using  cauliflower for the very first time and it turned out really great.And was really super excited Smiley faceabout the end result,doesn't sound silly .Ok ok i don't want to bore you guys by telling my own story.Now lets go to the recipe.

Ingredients :
Cauliflower 1 1/2 cup(finely chopped)
Carrot 1/2 cup (-do-)
Peas 1/2 cup
Onion 1 big sized
Tomato 1 big sized
Coriander leaves 2 tbsp(finely chopped)
Turmeric powder 1/4 tsp
Salt Req
Water Req

To Powder :
Roasted gram 1 1/2 tbsp
Dhania 3/4th tsp
Cumin seeds 1/2 tsp
Red chillies 3-4 nos

Seasoning :
Oil 2 tbsp
Mustard seeds 1/2 tsp
Curry leaves Req

Method :
1. Put the cauliflower in lukewarm water with salt and bit turmeric powder and set aside for few min's.

2. Finely chop all the veggies and boil in the cooker upto 1 whistle and set aside.


3. Now powder the items given under to powder column.


4. In a wok pour the oil and do the seasoning and add the onion.Fry till onion becomes transparent


5. Now add the tomato and fry till they become mushy.


6. Throw in the main ingredients cauliflower along with other veggies and give a quick stir for few min's.


7. Its time to add the grounded powder and mix well.


8. Now add water and allow it to boil for around 20min's or till the raw smell goes.


9. Prepare normal dosa and once its cooked, keep the masal in the centre(like normal masal dosa) and cook.


Cauliflower masal was yummy to have with curd rice too.


Notes :

1. Powdering portion is important so please don't replace with dry powders.

2. Cooking for a long time is important to remove the raw smell,so cook accordingly.

3. Adjust the spice level according to taste.

4. My dosa didn't turn out too brown as batter becoming sour in this climate is very very difficult.

5. If required can even add coriander leaves.

Rava Dosa

              I think there is lots of variations in preparing rava dosa and my variation is bit different and got this from my cousin.First was following my mom's variation but didn't like that much,donno why.But after my cousin introduced me this variation i'm addicted to this.So here is easy rava dosa.









Ingredients :
Here 1 cup is used is 100ml(small cup)

Rava/Soji1 cup
Rice flour 1 1/2 cup
Maida Less than 1/2 cup
Onion 1 medium size
Green chillies 2 nos(finely chopped)
Coriander Leaves
2 tbsp(finely chopped)
Curry Leaves Little
Salt Req
WaterReq


Seasoning :

Oil 1 1/2 tsp
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Pepper 1/2 tsp


Method :

1.  Soak rava  separately and grind to fine paste.







2.  Now take maida,rice flour in a separate container and add the ground rava to it.








3.  Now mix the batter with the whisk by adding required water so that no lumps are formed.







4.  Now add salt and chop the onions,coriander leaves,curry leaves,green chillies finely and to the batter.







5.  Now season the items given under the seasoning column and add to the batter.








6.  Now on the tawa pour the batter first the outer circle and then fill the inner circle and cover with a lid.(but  i just use to throw the batter that's y i didn't get an cylindrical shape :)







7.   Once the top side is cooked and crisp flip on the other side and leaves for few sec's.Now serve hot with any kind of chutneys.








Notes :

1.  Should prepare the batter little runny than the usual dosa batter.

2.  Salt measurement should be always equal r bit more than the rice flour measurement(1 cup rice flour means 1 tsp salt.Here 1 cup is 200ml)

3.  Once we open the lid we can see the bottom portion has become brown and is roasted.Then we can flip other side,else the batter will stick on the tawa.

Curry Leaves Dosa/Karuvepillai Dosa

                         This is a very interesting recipe and a healthy dosa too.First when is heard the recipe from my mom i was asking my mom wether we will get the smell or the bitter taste of curry leaves.For that she replied try out and see as she was also in doubt regarding the smell and taste when she first saw the recipe in Revathy Shanmugam's cookery show.Then i thought to try it out and was really awesome and the taste was too good too.So i thought i will share the recipe with you guys too.Its really healthy and easy to prepare and also one more dosa variety which kids will love to have.







Ingredients :

Raw Rice 1 1/2 cups
Boile Rice 1/2 cup
Urad dall 1/4 cup
Toor dall 1 tbsp
Fenugreek 1 tsp
Rice flakes/poha 1/2 cup
Cumin seeds 1 tsp
Shallots 10 nos
Curry leaves 1 cup
Green chillies 4 nos
Salt Req



Method :

1.  Soak raw rice,boiled rice,urad dall ,toor dall and fenugreek together for around 3 hrs.Soak rice flakes seperately for around 1/2 hr and then grind the total ingredients together in the mixie and allow it to ferment.






2.   Now dilute the dosa batter with little water as do for normal dosa and pour the batter in the dosa tawa as usual.But the dont make it too thin pour as a oothapam and cover with a lid and cook.






3.  Now the dosa/oothapam is ready and serve with any kind of chutney's.I served with coconut and onion chutney.







Notes :

1.  Before pouring the batter on the dosa tawa,tawa should become nicely hot and then keep in sim and then pour the batter with the ladle.

2.  Instead of oothapam we can prepare as normal dosa also but i found the oothapam to be the best.

3.  You can also grate the carrot and put on top of the dosa.

4.  I grinded the batter in the evening and allowed it to ferment the whole night.
